Granola Recipe for quick satisfying breakfast on the run or slow and relaxed... however you do Breakfast!
Breakfast. I LOVE breakfast. I love all breakfast foods, whether it be a full cook-up at a local cafe, something sweet and decadent like pancakes or waffles, or cereal eaten straight from the box....( You know you love it :) ) I could eat a breakfast item for every meal of the day and with the variety and choice available quite often I do....
This week I am going to share 2 pretty fantastic Breakfast recipes with you. My home made Granola I have adapted over the years to create exactly what I want, but the great thing about Granola is you can easily adapt the ingredients to suit your own tastes. AND this makes a great big batch that you can bottle up and grab one on the run each morning, sprinkle it on your favourite yoghurt, or eat it straight from the jar.
My Granola Recipe
½ cup coconut oil
½ cup maple syrup
½ cup brown sugar
1 tbsp vanilla essence
½ tsp salt
3 cups rolled oats
1 cup puffed brown rice
1 cup puffed corn
1 cup chopped nuts and seeds
½ cup coconut flakes
1 cup chopped dried fruit
Melt the coconut oil, maple syrup, brown sugar,salt and vanilla together, either in microwave or on a stove-top.
Mix the oats, rice, nuts and seeds together.
Combine the wet and dry ingredients and mix well.
Place in a shallow baking tray. If you like big clusters you can form these before cooking or press down firmly and smooth into a thin layer. Bake for 20 mins at 180C, stirring occasionally to ensure it doesn't burn.
Remove from oven and lightly mix in dried fruit and coconut. Cook further 10 mins.
Store in a sealed container. Enjoy!!
